Abstract

Oils &Fats provide a concentrated source of energy. Like carbohydrates, they act as body fuel. They are also used to transport certain vitamins [A, E, D, K] around the body. Fats are stored in the body around the organs and muscles and under the skin, and here they maintain the body temperature and provide insulation. Fats are also used in the formation of sebum, the skin's natural lubricant. Carbohydrates and proteins that are not used up for energy is stored as fat. Every gram of fat provides 9 calories, more than double the amount provided by carbohydrates or protein. While a certain amount of fat is essential, excess fat is stored in the body contributing to weight gain. Diets high in fat often lead to obesity and are associated with disorders like heart disease and diabetes. Increased and diversified application of natural fats and oils have stemmed primarily from the advances which have been made in the knowledge of composition, structure and properties of these substances during present century.
